Paleo Shrimp Fried Rice Recipe

Ingredients

  • 1 tablespoon Coconut Oil
  • 1 White Onion, diced
  • 1 Carrot, diced
  • 1/2 pound Peeled and Deveined Shrimp
  • 2 cloves Garlic, minced
  • 1 teaspoon Minced Fresh Ginger
  • 4 cups Cauliflower Rice
  • 2 large Eggs, beaten
  • 2 tablespoons Coconut Aminos
  • 1 tablespoon Water
  • Green Onions, for serving

Directions

  1. Heat coconut oil over high heat in a large skillet.
  2. Add onion and carrot; stir fry for about 5 minutes, until carrot begins to soften.
  3. Add shrimp; stir fry 4 - 5 minutes, until shrimp is cooked through and veggies are tender.
  4. Add garlic, ginger, and rice cauliflower; cook 2 minutes, until cauliflower is cooked.
  5. Push rice mixture to the side of the pan. Add eggs and cook 30 seconds; toss with rice mixture and continue cooking until egg is cooked through.
  6. Stir in coconut aminos and waters; toss to make sure everything is coated.
  7. Serve with green onions, if desired.
